HOW LONG DOES HONEY LAST FOR?

In terms of how long honey lasts, there are three things to keep in mind. 

Firstly, honey is hygroscopic, meaning it absorbs water from the air; if the water content of rises above 20 percent you risk fermentation — so put the lid on after the jar is opened.

Secondly, runny honey granulates over time (real honey does this); this is not a quality issue, just a preference as to whether you wish the honey to be hard or runny should you store it for a period of time.  Granulation can be remedied by gentle heating (instructions on back of each jar).  Also, don’t keep it in the fridge or in a cold place as this propagates granulation.

Thirdly, extreme heat can degrade the honey’s quality — be careful keeping it in a car during a sunny day.

We usually put a two year ‘best before’ date on the jars from the day they are filled – that being said, honey has been found in the pyramids which still edible.
